Grilled Summer Veggies
I like to use :
1-2 1/2" red onion
1- similar sized green pepper
1-8oz mini portabello mushrooms
1-medium sized zuccini squash
1-similar sized yellow squash
12-14 peeled baby carrots
Dice veggies into nice sized chunks(I microwave the carrots for a couple of minutes prior to dicing)
Combine veggies into a GOOD ziplock 1 gl bag
Sprinkle with seasoned salt to taste(equal portions of salt,pepper,garlic powder)
add about 1/2- 3/4 cup of any cheap zesty itilian salad dressing(the cheap ones have more vingar)and 2-3 tlbs of balsamic vingar.
let marinate for at least two hrs(over night or up to 3 days)
I use a stirfry pan made for the grill(it's preforated)
I get it hot on the grill and add veggies cook for about 8-12 mins on med heat.
I have gotten people that have never liked squash before to try this and now they love it and only want it this way.
This salad dressing also makes a great marinate for Pork or Chicken
