 Cranberry-lemon Muffins
This is 'Unicorn's' work.   Yeah, I swiped it.  2 Bite Canna Cranberry Lemon Muffins Ingredients: 2 cups all purpose flour 1/2 cup sugar 3 tsp baking powder 1/2 teaspoon salt 3/4 cup milk 1/2 cup melted canna butter 1 egg, beaten 1 tbsp grated lemon rind 1 cup chopped cranberries (fresh or frozen) Heat oven to 400 F. Line 16 place small cup muffin tin with paper cups. In medium bowl, combine flour, sugar, baking powder and salt and lemon rind; mix well. In small bowl combine milk, egg and canna butter. Add dry ingredients to the moist and mix until dry ingredients are moistened. Add cranberries till mixed through, don't over mix. Fill prepared muffin cups 2/3 full. Bake for 18 - 22 minutes or until golden brown. Cool 1 minute before removing from pan. Going to try it out.      |
