EFA's (essential fatty acids) are also used by the body as a "foundation" for building hormones, and as such they directly help the body regulate the endocrine system. That's why northern coastal peoples (Vikings, Irish, etc.) are rather larger in size than most plains peoples. The EFA's in the seafood helps them to regulate growth hormone, testosterone, and estrogen, to name a few. EFA's are heat sensitive, and perisable. That's why the little capsules you buy at the health food store are useless, and also explains why the plains peoples (raw grain is also high in EFA's) see little or no benefit from grains in their diet. Most grains are "processed" and cooked, thus destroying the EFA's
